Possible trip idea...? Maybe I could be crowned the "Hop Queen"!
Every mid-September, Brouweij Van Eecke picks fresh hop cones from the fields of Poperinge to brew their special edition Hommelbier. It is a very limited amount that gets bottled and even less comes to the USA. So, if you find a bottle, you better grab it! Red Dog in Franklin, TN has a few bottles left I believe.
The food pairing for this beer is what my husband has dubbed "Candied Salmon". He used our Traeger smoker to smoke a couple of salmon filets for 3 hours at a low temperature while basting them with a Teriyaki-style marinade a few times every hour. The end result is a juicy, tender, sweet piece of fish that pretty much melts in your mouth.
The beer and food pairing turned out to be absolutely stunning because of the richness of the fish versus the dryness of the beer. The fresh fruity flavors of the beer complemented the sweetness of the fish while adding a citrusy brightness and moderate acidity. The hop bitterness cut thru the richness of the dish while lifting the fat and exposing the divine flavors of the fish. The high carbonation acted as scrubbing bubbles to the tongue preparing your mouth for the next bite. As I said earlier, this beer reminded me of Sauvignon Blanc which is a wine I would suggest for this pairing.*
*Side note: sometimes I imagine what wine I would use in a pairing and then choose the beer accordingly. I see a lot of similarities between beer and wine. :)
